Ingredients:

For the Turkey:

  • 1 whole turkey (12-14 lbs), thawed
  • 1/2 cup unsalted butter, softened
  • 2 lemons, halved
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 head garlic, halved
  • Fresh rosemary, thyme, and sage sprigs
  • Salt and pepper to taste

For the Herb Butter:

  • 1/2 cup unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp fresh sage, chopped
  • 1 tsp paprika
  • 1 tsp lemon zest
  • Salt and pepper to taste

Instructions:

1. Prepare the Turkey:

  1. Preheat your oven to 325°F (165°C).
  2. Remove the turkey neck and giblets, rinse the turkey inside and out under cold water, and pat dry with paper towels.
  3. Gently loosen the skin over the breast and legs using your fingers, being careful not to tear it.

2. Make the Herb Butter:

  1. In a small bowl, mix melted butter, olive oil, minced garlic, rosemary, thyme, sage, paprika, lemon zest, salt, and pepper.

3. Season the Turkey:

  1. Rub the softened butter under the skin and all over the turkey.
  2. Rub the herb butter generously over the skin.
  3. Stuff the cavity with halved lemons, onion, garlic, and herb sprigs.
  4. Scatter the chopped carrots, celery, and onions in the roasting pan.

4. Roast the Turkey:

  1. Place the turkey breast-side up on a rack in the roasting pan.
  2. Roast uncovered in the preheated oven, basting every 30-40 minutes with pan drippings, until the internal temperature in the thickest part of the breast reaches 165°F (75°C). This takes about 15 minutes per pound.
  3. If the skin browns too quickly, tent the turkey loosely with foil.

5. Rest and Carve:

  1. Remove the turkey from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute.
  2. Carve and serve with your favorite Christmas sides!
