 Ingredients:-

Rice cakes (tteok): 500 grams (fresh or frozen)  
Fish cakes: 200 grams, sliced (optional)  
Gochujang (Korean red chili paste): 2 tablespoons  
Gochugaru (Korean chili flakes): 1 tablespoon (adjust for spice preference)  

Soy sauce: 1 tablespoon  
Sugar: 1 tablespoon  
Garlic: 3 cloves, minced  
Green onions: 2 stalks, chopped  
Water or anchovy stock: 2 cups  
Sesame oil: 1 teaspoon  
Sesame seeds: For garnish  

 Instructions:-

1. Prepare the Rice Cakes:  
   If using frozen rice cakes, soak them in warm water for 20 minutes to soften. Drain and set aside.  

2. Make the Sauce:  
   Mix gochujang, gochugaru, soy sauce, sugar, and minced garlic to form a smooth paste in a bowl.

3. Cook the Tteokbokki:
    In a large pan, heat water or anchovy stock over medium heat.  
    Add the sauce mixture and stir until fully combined. Bring to a simmer.  
    Add the rice cakes and fish cakes. Cook for 8-10 minutes, stirring occasionally, until the rice cakes are soft and the sauce thickens.

4. Garnish and Serve:  
    Stir in sesame oil and green onions.  
    Garnish with sesame seeds before serving.  

 Tips for Perfect Tteokbokki:-
  
Stock Choice: Anchovy stock adds depth of flavor, but plain water works well too.  
Add-ons: Customize your tteokbokki by adding boiled eggs, ramen noodles, or vegetables like cabbage and carrots.  
Spice Level: Adjust gochugaru and gochujang to control the heat.
