Udon Noodles Recipe
Ingredients:
2 servings of udon noodles
4 cups dashi or chicken broth
1 cup sliced mushrooms
1/2 cup spinach
1 tablespoon soy sauce
1 teaspoon mirin
1 green onion, sliced
Instructions:
Prepare the Broth:
- In a pot, heat 4 cups of dashi or chicken broth. Stir in 1 tablespoon soy sauce and 1 teaspoon mirin.
Cook the Noodles:
- Cook udon noodles according to package instructions. Drain and set aside.
Add Vegetables:
- Add sliced mushrooms and spinach to the broth. Simmer until mushrooms are tender and spinach is wilted.
Assemble the Dish:
Divide noodles into bowls. Pour hot broth and vegetables over the noodles. Garnish with sliced green onions.
